Our family always has an array of baked buttery shellfish, along with spaghettini with anchioves. 1 pound (about 450g) salmon fillet, skin removed 2 tablespoons fresh dill, finely chopped 2 tablespoons fresh parsley, finely chopped 1 tablespoon fresh chives, finely chopped 2 tablespoons breadcrumbs 2 tablespoons grated Parmesan cheese 2 tablespoons olive oil Salt and black pepper, to taste For the Lemon Aioli: 1/2 cup mayonnaise 1 clove garlic, minced Zest of one lemon 1 tablespoon fresh lemon juice Salt and black pepper, to taste For Serving: Lemon wedges for garnish
| Preheat your oven to 375°F (190°C). Cut the salmon fillet into bite-sized cubes. In a bowl, combine chopped dill, parsley, chives, breadcrumbs, Parmesan cheese, olive oil, salt, and black pepper. Mix well. Coat each salmon bite with the herb-crusted mixture, pressing gently to adhere. Place the herb-crusted salmon bites on a baking sheet lined with parchment paper. Bake in the preheated oven for 12-15 minutes or until the salmon is cooked through and the coating is golden brown. While the salmon is baking, mix together mayonnaise, minced garlic, lemon zest, lemon juice, salt, and black pepper in a small bowl to make the lemon aioli. Arrange the Herb-Crusted Baked Salmon Bites on a serving platter with lemon wedges on the side. Serve the lemon aioli in a small dipping bowl.
