What we’re cooking this weekend - New Year’s Eve Fortune Cookies 🥠

Ingredients:

  • 2 large egg whites

  • 1/2 cup (100g) granulated sugar

  • 1/4 cup (60ml) melted unsalted butter

  • 1/4 teaspoon vanilla extract

  • 1/4 teaspoon almond extract

  • 1/2 cup (60g) all-purpose flour

  • 1 tablespoon water

Fortune Strips:

  • Small strips of paper (about 2.5 inches long)

  • Messages or fortunes written on the strips

Instructions:

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

  2. In a bowl, whisk together the egg whites and sugar until well combined. Add the melted butter, vanilla extract, almond extract, and water. Stir in the flour until the batter is smooth.

  3. Drop tablespoons of batter onto the prepared baking sheet, spacing them about 3 inches apart. Use the back of a spoon to spread the batter into thin, even circles about 4 inches in diameter.

  4. Bake in the preheated oven for 8-10 minutes or until the edges of the cookies are lightly golden.

  5. Work quickly, as the cookies set fast. Place a fortune strip in the center of each cookie. Use a spatula to lift one side of the cookie, fold it in half, and then gently shape it into a fortune cookie shape by placing the folded edge over the rim of a cup or glass. Hold in place until set.

  6. Allow the cookies to cool completely before removing them from the parchment paper.

  7. Repeat the process with the remaining batter, working with one or two cookies at a time.
