What we’re cooking this weekend - Spiced Cranberry Orange Bundt Cake with Cream Cheese Glaze 🍰

Ingredients:

For the Cake: 

  • 2 1/2 cups all-purpose flour

  • 2 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon ground nutmeg

  • 1 cup unsalted butter, softened

  • 1 1/2 cups granulated sugar

  • 4 large eggs

  • 1 cup plain Greek yogurt

  • 1 teaspoon vanilla extract

  • Zest of 1 orange

  • 1 cup fresh or frozen cranberries, coarsely chopped

    For the Cream Cheese Glaze:

  • 4 ounces cream cheese, softened

  • 1 cup powdered sugar

  • 2 tablespoons milk

  • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a bundt cake pan.

  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.

  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

  4. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract and orange zest.

  5. Gradually add the dry ingredients to the wet ingredients, alternating with the Greek yogurt. Begin and end with the dry ingredients. Mix until just combined.

  6. Gently fold in the chopped cranberries until evenly distributed throughout the batter.

  7. Pour the batter into the prepared bundt cake pan and smooth the top. Bake in the preheated oven for 50-60 minutes or until a toothpick inserted into the center comes out clean.

  8. Allow the cake to cool in the pan for 15 minutes before transferring it to a wire rack to cool completely.

  9. In a small bowl, beat together the softened cream cheese, powdered sugar, milk, and vanilla extract until smooth and creamy.

  10. Once the cake has cooled, drizzle the cream cheese glaze over the top. You can also sprinkle some additional orange zest or chopped cranberries for decoration.
